Picante Breakfast Pie

5 eggs, well beaten
¼ cup all-purpose flour
½ tsp. each: baking powder and baking soda
2 cups shredded Mexican Style Shredded Cheddar Jack Cheese
1 (15-oz.) Rojo’s Thick & Chunky Picante-Medium
1/2 cup sour cream
2 Tbsp. melted butter

Preheat oven to 350°F. Spray a large pie dish with pan spray; set aside. In large bowl, beat eggs, then whisk in flour, baking powder and baking soda until fairly smooth. Stir in cheese, ½ cup Rojo’s Thick & Chunky Picante-Medium, sour cream and butter. Pour mixture into prepared dish. Bake at 350°F for 40 minutes or until center is firm. Serve with remaining salsa. Makes 6 servings.
