One Pot Chicken Dinner

1 (13 oz) Rojo’s Tomatillo Avocado Salsa
1 (13 oz) can pinto beans, drained well
1-1/2 cups chicken broth
1 cup whole kernel corn
1 cup long-grain rice
6 boneless skinless chicken thighs
sour cream (optional)
In a large skillet or pot, mix together all ingredients, except chicken and sour cream. Place chicken in salsa mixture and bring to a boil. Cover and reduce heat to low. Cook 25 minutes or until rice is tender. Spoon onto plates and serve with sour cream. Makes 4-6 servings.
