Margarita Carnitas

1 (3 lb.) pork butt roast
Salt and black pepper
1 (14-oz.). Rojo’s Restaurant Style Salsa
½ cup Margarita Mixer
Taco size corn tortillas
Sour cream (optional)
sliced green onions (optional)

Preheat oven to 300ºF. Season roast with salt and pepper and place in small roasting pan sprayed with pan spray. In small bowl mix, Rojo’s Restaurant Style Salsa and Margarita mixer; pour mixture over roast. Cover pan, place in oven and bake for 3 hours or until pork shreds easily. Remove and discard excess fat and connective tissue. Shred pork and serve in warmed corn tortillas.
Garnish with sour cream and green onions.  Makes 4 servings
