Arroz Con Pollo

2 slices bacon
4 boneless skinless chicken thighs
Salt and black pepper
1 (15-oz.) Rojo’s Homestyle Fresh Cut Salsa – Mild
1 1/2 cups water or chicken broth
3/4 cup long grain white rice
1/2 cup frozen peas (optional)

In large skillet, fry bacon until crisp; drain on paper towels, crumble and set aside. Remove all, except 3 Tbsp. bacon drippings, from skillet. Season chicken with salt and pepper and brown in drippings in skillet; remove and set aside. Add Rojo’s Homestyle Fresh Cut Salsa – Mild to skillet with water and rice. Bring to boil and add chicken with accumulated juices. Cover and cook 15 minutes. Add peas and cook, covered, 5 minutes longer. Sprinkle with crumbled cooked bacon. Makes 4-6 servings.
